Pumpkin Bumpkin Bread

1 c. canned pumpkin
2 eggs
1 tsp. vanilla
1 c. chopped walnuts
1/2 c. oil
1/3 c. water
1/2 tsp. cinnamon
1/2 tsp. ground cloves or allspice
1/2 tsp. ground nutmeg
1 1/2 c. sugar
1 1/4 c. flour
1 tsp. baking soda
1/2 tsp. salt


Getting your Ingredients

In a 2 quart mixing bowl, combine eggs, vanilla, nuts, oil, water and spices. Stir in sugar. Combine flour, baking soda and salt in a separate bowl, then stir into pumpkin mixture. Blend only until all ingredients are moistened.

Turn batter into a well greased glass loaf dish or microwavable safe dish.

Place dish on an inverted saucer or cereal bowl in the oven to elevate. Set microwave oven at cook, cycle 1, power level 5, for 12 minutes and then cook cycle 2, power level 10 for 6 minutes, rotate 1/4 turn every 3 minutes.

If necessary, microwave at cook cycle 1, power level 10 an additional 3 to 9 minutes to complete baking. Let loaf stand 10 minutes before removing from dish. Let stand an additional 5 minutes before serving.
